For the best Turkey travel plan, tasting from everything Turkey has to offer, we would suggest combining 2-3 days in Istanbul, 2-3 days in Cappadocia and as much as time allows swimming and sunbathing vacation in one of the great Antalya Mediterranean coast resorts.
Flying between each of the regions, would be the most time efficient, while the order of destinations visited does not really matter.

As for climate, the summer months of July August tends to be very warm, with the best periods to visit Turkey are the Spring, April-June, and September.
